I grew up in a small village in southern Finland and that village had its own bakery, baking the best glazed doughnuts and Alexander's pastries. Unfortunately, the bakery is no longer there. But you can bake these pastries at home :) Here's my version of the Alexander's pastry.
Alexandersbakelse
Kakbotten
100 g smör
0,5 dl socker
2 dl vetemjöl
0,5 ägg
Fyllning
0,5 dl hallonsylt
Glasyr
2 dl florsocker
0,5 msk citronsaft
3/4 msk vatten
Nyp ihop smör, socker och mjöl till en smulig blandning. Tillsätt en äggula eller 0,5 ägg och blanda degen jämn. Kavla degen mellan två bakplåtspapper till en rektangulär platta ca 0,5 cm tjock. Grädda i 175 C ugn i ca 18 minuter. Låt svalna en aning. Skär plattan på mitten till två lika stora delar. Bred hallonsylt på den ena delen. Lyft den andra delen på hallonsylten. För glasyren tillsätt vätskan gradvis i florsockret, tills du har en smidig glasyr. Bred glasyren på kakan. Låt glasyren stelna och skär sedan i bitar.
Alexander’s Pastry
Cake
100 g butter
0.5 dl sugar
2 dl wheat flour
0.5 egg
Filling
0.5 dl raspberry jam
Glaze
2 dl icing sugar
0.5 tbsp lemon juice
3/4 tbsp water
Nip butter, sugar and flour into a crumbly mixture. Add an egg yolk or a small egg and mix the dough evenly. Roll the dough between two parchment papers into a rectangular disc about 0.5 cm thick. Bake in a 175 C oven for about 18 minutes. Let cool a little. Cut the disc in the middle to two equal parts. Spread raspberry jam on one part. Lift the other part on the raspberry jam. For the glaze add the liquid gradually into the icing sugar until you have a smooth glaze. Spread the glaze on the cake. Let the glaze solidify and then cut into pieces.
