In my family, this pie goes under the name sour cream pie and when I was a child we baked it often. Usually with blueberry filling, but sometimes with both blueberries and lingonberries. Today you get my version of the pie, it's gluten free and I use erythritol as a sweetener. The pie itself is not so sweet, so if you want a sweeter pie increase the amount of sweetener.
Blåbärspaj med gräddfil
2 små pajer
1 3/4 dl mandelmjöl
25 g smör
1 tsk psyllium husk
0,5 msk erytritol
1 äggula
fyllning
blåbär, frysta
psyllium husk
1 dl gräddfil
0,5 ägg
3 msk erytritol
Börja med att blanda ihop mandelmjöl och smör och tillsätt sedan resterande ingredienser. Tryck degen i två små pajformer och ställ i kylen för 20 minuter. Värm ugnen till 175 C grader och förgrädda pajskalet 8 minuter. Fyll pajskalet med blåbär, så att de täcker bottnet. Strö på lite fiberhusk om du använder frysta blåbär.
Blanda ihop gräddfil, ägg och erytritol och häll på pajerna. Grädda i ugnen i ca 30 minuter, eller tills fyllningen stelnat.
Blueberry Pie with Sour Cream
2 small pies
1 3/4 dl almond flour
25 g butter
1 tsp of psyllium husk
0.5 tbsp erythritol
1 egg yolk
filling
blueberries, frozen
psyllium husk
1 dl sour cream
0.5 egg
3 tbsp erythritol
Begin to mix together almond flour and butter, then add the remaining ingredients. Press the dough into two small pie tins and place in the fridge for 20 minutes. Preheat the oven to 175 degrees C and bake the pie crusts for 8 minutes. Fill the pie crusts with blueberries, so that they cover the bottom. Sprinkle on a little psyllium husk if you use frozen blueberries.
Mix together sour cream, eggs and erythritol and pour on the pies. Bake in the oven for about 30 minutes, or until the filling has set.
