On Fanny's blog, you find many yummy and creative recipes. This cake is inspired by her, I chose to make it vegan and topped it with a "cream cheese" frosting. The cake was delicious and moist. A cake, I will definitely do again.
Hälsosam Chokladkaka (mockarutor)
2 linfrö-ägg (blanda 2 msk malda linfrön med 6 msk vatten)
2 msk sojayoghurt
1 dl morotspuré (kokta morötter mixade till puré)
2 msk kokosolja
4 msk kokossocker
4 msk kakao
3/4 dl kokosmjöl
1,5 tsk bakpulver
1/4 tsk vaniljpulver
en nypa salt
frosting
2 msk kokosolja
1,5 msk kakao
1,5 dl florsötning
1 msk kaffe
Blanda ihop malda linfrön med vatten och låt stå 5-10 minuter. Blanda ihop linfrö-ägg med yoghurt, morotspure och kokosolja. Blanda sedan i resterande ingredienser och rör tills slät. Häll blandningen i en bakplåtspappersklädd brödform och grädda i 175 C grader i ca 15-20 minuter.
Blanda ingredienserna till frostingen och bred på kakan när den svalnat.
Healthy Chocolate Cake
2 flax-eggs (mix 2 tbsp of ground flax seed with 6 tbsp water)
2 tbsp soy yogurt
1 dl carrot puree (boiled carrots mixed into puree)
2 tbsp coconut oil
4 tbsp coconut sugar
4 tbsp cocoa powder
3/4 dl coconut flour
1.5 tsp baking powder
1/4 tsp vanilla powder
a pinch of salt
frosting
2 tbsp coconut oil
1.5 tbsp cocoa
1.5 dl icing sugar
1 tbsp coffee
Mix together ground flaxseed with water and let sit 5-10 minutes. Stir together flax-eggs, yogurt, carrot puree and coconut oil. Then mix in the remaining ingredients and stir until smooth. Pour the mixture into a parchment paper covered loaf pan and bake at 175 degrees C for about 15-20 minutes.
Mix the ingredients for the frosting and spread on the cake when it has cooled.
