Igår flög jag och mannen till Hong Kong. Vi har tidigare besökt staden två gånger, men vi gillar verkligen staden och här har vi möjlighet att vandra i bergen.
Nowadays, it is common to mix vegetables and beans in baked goodies. And I think they fit well and rarely take over the flavor of the baked goods. The recipe for these yummy brownies with sweet potatoes come from Deliciously Ella. They are gluten-free, sugar-free and vegan. Next time when I make them, I will use more cocoa and add orange zest. Yum!
Yesterday me and my husband flew to Hong Kong. We have previously visited the country twice, but we really like the city and here we have the opportunity to hike in the mountains.
Sweet Potato Brownies
makes 10 brownies
2 medium to large sweet potatoes (600g)
1.5 dl ground almonds (80g)
1 1/4 dl buckwheat or brown rice flour (100g)
14 medjool dates
4 tbsp cacao powder
3 tbsp maple syrup
a pinch of salt
Pre-heat the oven to 180 C. Peel the sweet potatoes and cut
them into chunks and place into a steamer for about 20 minutes, until they
become really soft.
Remove them from the heat and add them to a food processor
with the pitted dates and mix until smooth.
Put the remaining ingredients into a bowl, before mixing in
the sweet potato-date combination. Stir well.
Pour the batter into a lined baking dish and bake for about
20 minutes. Allow to cool for about 10 minutes, this is really important as it
needs this time to stick together. Cut into squares.
Sötpotatis Brownies
10 st brownies
2 medelstora till stora sötpotatis (600g)
1,5 dl mald mandel (80g)
1 1/4 dl bovete eller brunt rismjöl (100g)
14 Medjool dadlar
4 msk kakaopulver
3 msk lönnsirap
en nypa salt
Värm ugnen till 180 C. Skala sötpotatisen och skär dem i
bitar och ånga dem i ca 20 minuter, tills de blir riktigt mjuka.
Ta bort dem från värmen och lägg dem i en matberedare med
dadlarna, mixa tills slät.
Sätt de resterande ingredienserna i en skål och blanda i
sötpotatis-dadelblandningen. Rör om väl.
Häll smeten i en bakplåtspappersklädd ugnsform och grädda i
ca 20 minuter. Låt svalna i 10 minuter, detta är verkligen viktigt eftersom den
behöver denna tid för att hålla ihop. Skär i rutor.

Kul recept. Vanlig potatis har jag ofta i bakverk, men sötpotatis har jag hittills inte testat. Klart att det går lika bra. Som av en händelse har jag två sötpotatisar som ligger i kylen och väntar på att tas om hand! Ha en härlig påskhelg Katarina! Kram!
