I was looking for inspiration for chocolate muffins because I wanted to try a new recipe. I found this recipe from Linda's blog and the muffins were very good. Be careful not to bake them too long because you don't want dry muffins.
Chocolate Muffins
300 g flour
80 g cocoa powder
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
250 g granulated sugar
100 g butter, melted
250 ml buttermilk
2 large eggs
150 g dark chocolate (70%), coarsely chopped
Heat the oven to 200°C. Prepare a cupcake pan with 12 muffin
cups. Mix flour, cocoa powder, baking powder, baking soda and salt in a bowl.
Set aside. Mix sugar, butter, buttermilk and eggs in a large bowl. Add the dry
ingredients to the wet ingredients and mix until just combined. Stir in chocolate,
but save 1/4 of the chocolate to put on top of the muffins. Divide the batter
between the muffin cups, filling them completely full. Sprinkle with remaining
chocolate pieces. Bake for 15-18 minutes or until a cake tester comes out
almost clean.
Chokladmuffins
300 g mjöl
80 g kakaopulver
1 msk bakpulver
0,5 tsk bikarbonat
1/4 tsk salt
250 g strösocker
100 g smör, smält
250 ml kärnmjölk
2 stora ägg
150 g mörk choklad (70%), grovt hackad
Värm ugnen till 200 ° C. Förbered en muffinsplåt med 12
muffinsformar. Blanda mjöl, kakao, bakpulver, bikarbonat och salt i en skål.
Ställ åt sidan. Blanda socker, smör, kärnmjölk och ägg i en stor skål. Lägg de
torra ingredienserna till de våta ingredienserna och blanda. Rör i chokladen,
men spara 1/4 av chokladen för att strö på toppen av muffins. Fördela smeten
mellan muffinsformarna, fylla dem helt fulla. Toppa med resterande
chokladbitar. Grädda i 15-18 minuter eller tills en kaktestare kommer ut nästan
ren.
